Description:
Pistachios grow in clusters on trees, meaning several fruits grow closely together. A fleshy outer layer surrounds the actual pistachio. Beneath this flesh lies the pistachio kernel, encased in a light-colored woody shell that allows it to mature safely. The kernel itself is covered only by a thin purple skin. The pistachio (scientific name Pistacia vera) is often mistakenly classified as a nut, but it is actually a drupe. It is also known as the “green almond” and belongs to the same family as mango and cashew trees.

Uses:
Raw, shelled pistachios are often used in baking and confectionery, for example in nut bread or cakes. Due to their vibrant green color, pistachios are also a popular decorative ingredient in ice cream, desserts, and as a topping for cakes.
